Ingredients:
– 4 chicken thighs, bone-in and skin-on
– 1 cup of basmati rice
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 1 inch of ginger, grated
– 1 red chili, finely chopped
– 1 tablespoon of honey
– 2 tablespoons of soy sauce
– 1 tablespoon of oyster sauce
– 1 tablespoon of sesame oil
– 1 cup of chicken stock
– Salt and pepper to taste
– Chopped spring onions and coriander for garnish
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a bowl, mix together the honey, soy sauce, oyster sauce, and sesame oil. Set aside.
3. In a large oven-safe pan, heat some oil over medium-high heat. Season the chicken thighs with salt and pepper and place them skin-side down in the pan. Cook for 5 minutes until the skin is crispy and golden brown. Flip the chicken and cook for an additional 3 minutes. Remove the chicken from the pan and set aside.
4. In the same pan, add the onion, garlic, ginger, and chili. Cook for 2-3 minutes until the onion is translucent.
5. Add the rice to the pan and stir to coat it with the onion mixture. Pour in the chicken stock and bring it to a boil.
6. Place the chicken thighs on top of the rice and pour the honey and soy sauce mixture over the chicken.
7. Cover the pan with foil and bake in the oven for 25 minutes.
8. After 25 minutes, remove the foil and bake for an additional 10 minutes until the chicken is fully cooked and the rice is tender.
9. Once done, remove the pan from the oven and let it rest for 5 minutes.
10. Garnish with chopped spring onions and coriander before serving.
